Christian has been in search of the perfect Turkey... Dan thinks he need not search any farther!

Ingredients:

Clumps of fresh thyme, rosemary and sage
1 bulb of garlic
1 cup sea salt
1/4 cup maple syrup
1 Tbl whole all spice
2 Quart apple cider
3 Quart vegetable broth

1 Apple
1 Onion
1 Cinnamon Stick
1.5 Gallons cold water
2 Bags of ice

Boil
15 cloves of Garlic, half of the thyme, rosemary and sage
salt
all spice
maple
cider & broth

Reduce heat and simmer for one hour, chill to frig temp
Strain brine and empty into bucket
Add cool water
Place turkey breast down, cover with ice and store in garage for 8-12 hours

Remove from brine - rinse
Fill cavity with a cinnamon stick, the remaining thyme, rosemary and sage, a partially roasted apple, onion, and gloves of garlic. Do not over-pack cavity, to allow for air flow. The pre-roasted items should be soft to allow for full aroma penetration. I also place a whole soft apple in the neck cavity.

Place uncovered in 500 degree oven for 20 minutes - this will seal the meat, and will brown the breast. Reduce heat to 325 cover breast with tin-foil triangle (make and shape this foil before ever placing in oven, that way you don't have to mess around with a hot bird) and cook without interruption until deep breast is 165 degrees. This means no opening the oven and no basting.

A 16 pound Bird will take about three hours after 20 minute seal.
